Bruschetta Chicken


  • 4 Chicken Breasts

  • 1 Bottle Kens Sundried Tomato Salad Dressing (low fat)

  • 3 Roma Tomatoes Diced

  • 1 Bunch Fresh Basil finely chopped

  • 1/2 Cup Shredded Mozzarela (skim)

  • Italian Seasoning of choice


  1. Marinate chicken breasts with Italian seasoning of choice and Sundried Tomato Dressing

  2. Heat the grill and prep one side with tin foil

  3. Grill the Chicken for 8 minutes on grill racks

  4. Meanwhile mix the bruschetta topping; 1/4 cup of dressing, diced tomatoes, chopped basil, and shredded cheese in a bowl

  5. Flip chicken over onto tin foil side of grill and top with bruschetta mixture

  6. Cook until chicken is done and enjoy! 

This is a simple chicken recipe that will add a strong fresh flavor to boring grilled chicken! Serve with a fresh garden salad or a green vegetable of choice! Chicken breast is a great lean meat high in protein and can be a prepared in a number of ways. It should be a regular staple in everyones diet. I eat chicken regularly every week but quickly get bored of plain grilled chicken.  My wife found this recipe so we mix it in to change it up.
